Sounds like you have one of the Gains under Global Control. Scroll down to the bottom of this link to the Pedal Control section [ 7.1 Global ] for the procedure.
Run through the options on the Parameters side, and see if anything is assigned as a Ctl Source.
Nothing wrong or cheap about the EV-5s. I have a couple here still going strong after decades of abuse.
