I was wondering if I can use the light S/Pdif input and the coax S/Pdif output at the same time?

Good question!

I think you should try; I personally don't see why it shouldn't work, w/the correct settings, unless internal hardware limitations put a stop to this.

Try setting DIG-IN to RCA and DIG-OUT>OPTICAL OUT to S/PDIF.

 It works. It wouldn't have if it didn't have all the setting choices. Nice.

So I can use that extra output I had sitting around and use the coax as a send to another effects unit that is coax only.

from the User Manual:

All of the digital outputs send live signals all of the time! However, they only
send one protocol. Select that protocol under SETUP DIG-OUT FORMAT.
Under (CS-TYPE) select Pro if you are primarily interested in using the
XLR digital outputs, and Cns if you are primarily interested in using the
RCA or optical (non-ADAT) digital outputs.
